French Lamb

Ingredients

Lamb

  • 2 racks grass-finished lamb chops (my kids call them lolly pops)
  • olive oil
  • salt & pepper
  • sprigs of fresh rosemary

Mint Pesto

  • 1 cup raw pistachios
  • 1 cup fresh mint
  • 1 cup fresh parsley
  • 1 cup grated Italian Parmesan
  • A glug of olive oil
  • 1 tsp lemon juice

Instructions

  1. Marinate your lamb in olive oil, salt and pepper

  2. Decorate with several sprigs of fresh rosemary

  3. Grill 3 minutes on each side.

Mint Pesto

  1. Combine mint, Parmesan, olive oil, lemon, pistachios in a blender or food processor. (Leave a little chunky)

  2. Salt and pepper to taste

  3. Serve on the side
